Swabian cuisine in our restaurant

Moderner Gastraum des Restaurant und Landhotel Winter auf der Schwäbischen Alb.

Our restaurant on the Swabian Alb

In our restaurant, a lot is about Swabian cuisine, but not only that. We love the classics that have always been popular here on the Alb, and at the same time we enjoy incorporating new ideas, thinking outside the box a bit and cooking dishes that make Swabian cuisine feel fresh and modern. It is precisely this blend of tradition and a youthful approach to cooking that makes our restaurant a firm favourite for many people on the Swabian Alb. Many guests come to us specifically because they know they can enjoy honest, fresh and varied food here – without any fuss, but with truly excellent quality.

When you talk about Swabian cuisine, you often think first of hearty, down-to-earth dishes: Spätzle, roasts, Maultaschen, braised dishes – dishes that fill you up and where you can tell they've been cooked by hand. Swabian cuisine is honest, direct and without any fuss, and that's precisely what makes it so popular. In the past, the main aim was to make good use of simple ingredients, and much of that has lasted to this day. And yet Swabian cuisine is anything but old-fashioned. You can develop it further, combine it, reinterpret it – and that is exactly what we do here.

On our menu you will therefore of course find the classics that you simply expect: a genuinely good veal schnitzel or a roast beef with onions just as it should be. Hearty, well-seasoned, without complicated gimmicks. These are dishes that belong here and that many guests regularly order with us because they know they are freshly prepared here and don't come out of some packet.

Alongside this, however, there are also dishes that show Swabian cuisine is not standing still. We make homemade pasta, which is combined differently depending on the season. We offer fish from the region that arrives completely fresh and is often given a modern twist by us. Game from our own hunting is just as much a part of what we do as high-quality seafood dishes that you might not immediately expect on a menu on the Alb – but that is precisely what defines our style: we take the best from here, complement it with ideas from other cuisines and make something new out of it.

This mix goes down well. Many people travelling across the Alb deliberately make a small detour to eat with us. They appreciate the quality, the craft and the way we combine Swabian cuisine with young, creative influences. Whether day-trippers, regulars or holidaymakers, people here know that the food is freshly prepared and that everything that happens in the kitchen is handmade.

Just under two years ago, we completely redesigned our restaurant. The space is now open, bright and modern. Plenty of light, clean lines, cosy seating areas – it feels fresh, relaxed and yet warm. The atmosphere fits our idea of modern Swabian cuisine perfectly: not dusty, not too traditional, but a place where you can feel at home without feeling like you are sitting in a heavy parlour. In summer, our large terrace invites you to linger – the most beautiful sunsets are guaranteed!

We stay true to our style when it comes to drinks too. We exclusively stock German wines. This not only fits in well with the region, but also with our cuisine. On our wine list you will find young winemakers from the local area who approach their wines with just as much ambition and freshness as we do when cooking our dishes. Many guests are surprised at how versatile German wines can be and how well they complement Swabian cuisine – whether with game, pasta, fish or our classic dishes.

In the end, we always focus on the same core idea: good food that is freshly cooked and suits us and the Alb. Swabian cuisine is our foundation, but we remain open to new things. We cook in a modern, regional, handmade way and without convenience products – simply honest. And that is precisely why so many people make a point of coming to us: because they know they will get food here that is enjoyable, close to the region and yet does not stand still.

If you fancy traditional Swabian cuisine with a modern twist that isn’t afraid to try new things, you've come to the right place. Here you’ll find plenty of things you know – and a few that will surprise you. And that is precisely what makes our restaurant special.
